Homemade American Cheese — Told in a Friendly, Story‑Driven.

 

A Little Intro to Set the Mood

There comes a moment when you look at a block of cheddar and think, “You’re lovely, but you could melt a bit better, couldn’t you?” And instead of accepting defeat, you decide to take matters into your own hands. A small culinary adventure. A gentle rebellion. A quest for cheese that behaves itself.

This recipe gives you that smooth, silky, perfectly melty cheese you see on burgers and in mac & cheese — but told in a calm, humorous, story‑like tone.


Ingredients (10–12 slices)

300 g mild cheddar

240 ml milk

1 tsp gelatin

1 tsp baking soda

1 tbsp cornstarch

1 tsp salt

Optional: a tiny drop of yellow food colouring or Annatto

 

Method


1. Warm the milk

Heat the milk gently. Not boiling, not bubbling, just warm enough to look like it’s thinking about doing something but hasn’t committed yet.

2. Add the gelatin

Sprinkle the gelatin over the warm milk. Let it sit and swell proudly, as if it’s finally being given the attention it deserves.

3. Add the baking soda

This is the peacekeeper. It keeps everything smooth, calm, and cooperative. Without it, your cheese would behave like it’s having a dramatic moment.

4. Add the cheddar

Cut the cheddar into cubes and drop them in. Stir slowly, as though you’re trying to persuade someone to get out of bed on a day they’d rather not.

The cheddar melts. You feel quietly triumphant. All is well.

5. Add the cornstarch slurry

Mix the cornstarch with a spoonful of cold milk, then pour it in. This keeps the mixture stable and stops it from separating like two people who realised they don’t share the same hobbies.

6. Stir until smooth

Keep going until the mixture becomes thick, glossy, and wonderfully obedient. A cheese sauce that looks like it’s been practising for this moment.

7. Pour and shape

Line a small tray or container with baking paper. Pour the mixture in and smooth it out. Thin for burger slices, thicker for a block. It’s your cheese — you’re in charge.

8. Chill

Pop it in the fridge for 3–4 hours. This is the part where you do absolutely nothing. Let the cheese sort itself out while you enjoy a quiet moment.


How to Use It

  • Burger slices: Cut thin squares. They melt beautifully.

  • Mac & cheese: Add 3–4 slices into your sauce for outrageous creaminess.

  • Cheese sauce: Melt a few slices with a splash of milk.

  • Toasties: A guaranteed success.
